LEMON PRIMAVERA PASTA RECIPE
Fresh broccoli, zucchini, carrots and tomatoes tossed with linguini and a light lemon flavored sauce—simple, healthy and delicious.
SERVINGS: 12
INGREDIENTS:
1½ TbspOlive Oil1½ tspGrated Lemon Peel1½ cupsBroccoli Florets¾ tspDried Basil2 clovesMinced Garlic¼ tspDried Oregano¾ cupJulienned Zucchini2Plum Tomatoes, seeded and diced½ cupJulienned Carrots6 ozLinguini, cooked¼ cupHoneySalt & Pepper, to taste½ cupLemon JuiceGrated Parmesan Cheese
DIRECTIONS:

Heat oil in a large skillet over medium high heat until hot. Add broccoli and garlic, then stir fry for 2 minutes. Add zucchini, carrots, honey, lemon juice, lemon peel and seasoning, then stir fry another 5 minutes, or until vegetables are tender crisp. Reduce heat to low, add tomatoes and simmer for 5 minutes. Toss with noodles, salt and pepper to taste and sprinkle with Parmesan cheese. Can be served hot, cold or at room temperature.

HELPFUL TIPS:
Although this doesn’t have meat, it is filling and can serve as an entree. Sometimes for festive occasions, I add a pound of cooked shrimp, but I cook them separately and add them just prior to serving. We like it both ways.
